You need to authorize AJAX requests to https://raw.githubusercontent.com/ to fetch the content of the doc.

Do you mean Peertube project requires allowing 3rd party tracking?
Is there anywhere the « source code » of that documentation to be able to read it directly?

No, just that the docs are hosted on github and that the doc website fetches them with AJAX requests.
